For this recipe I use yogurt cheese. It gives a very rich and creamy texture which helps mask the crunchy blackberry seeds. When yogurt is strained using a cheese cloth the whey is removed resulting in a thick yogurt cheese. For an easy substitute use Greek yogurt which is so similar you won't even know the difference.
- 3 cups fresh blackberries
- 3 cups yogurt cheese
- 1 can sweetened condensed milk
- In a blender puree the blackberries with the sweetened condensed milk.
- In a medium bowl mix the puree with the yogurt cheese.
- Pour the mixture into your ice-cream maker and follow the manufacturer's directions or use Popsicle molds for fresh homemade Popsicles.
