Cheesy Enchilada Casserole

  • 1 pound lean ground beef (90% lean)

  • 1 large onion, chopped or season with Onion powder or minced onion

  • 2 1/2 cups salsa

  • 1 can (15 ounces) black beans or red kidney beans, rinsed and drained

  • 1/4 cup reduced-fat Italian salad dressing

  • 2 tablespoons reduced-sodium taco seasoning

  • 1/4 teaspoon ground cumin

  • 6 flour tortillas (8 inches)

  • 1 small can of drained corn, or about 1 1/4 cups of frozen corn (optional)

  • 3/4 cup reduced-fat sour cream  *Note: I used 1/2 cup

  • 2 cups (4 ounces) shredded reduced-fat Mexican cheese blend

  • 1 cup shredded lettuce

  • 1 medium tomato, chopped

  • 1/4 cup minced fresh cilantro *Note:  I added 1/4 cup of fresh chopped cilantro to the meat mixture instead.

    • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
    • Stir in the salsa, beans, dressing, sour cream, taco seasoning and cumin.
    • Spoon a generous layer of meat mixture on bottom of 2 quart baking dish. Sprinkle with grated cheese.
    • Place a flour or corn tortilla on top of meat mixture. Layer with half of the meat mixture, and cheese. Repeat as many layers as you like.
    • The last & final layer should be a healthy dose of grated cheese.
    • Cover with foil that has been sprayed with pam or other and bake at 400° for 25 minutes, or until hot & bubbly.
    •  Let stand for 5 minutes before topping with lettuce, tomato and cilantro. Yield: 8 servings.

Cheese Stuffed Zucchini Rolls

Cheese Stuffed Zucchini Rolls
  1. Slice zucchini into 1/4 inch thick slices lengthwise.  A mandolin works best for this but you could always use a good old knife.  Discard the two outer slices that are mainly skin.
  2. Place the remaining slices on a baking sheet brush with olive oil on both sides, you should have around 15 slices.  Lightly sprinkle one side with salt to taste.  You just need a little, or none at all if you prefer.
  3. Place slices directly on a grill that has been preheated to medium.  Grill the slices until grill makes show on both sides and the zucchini is tender.  This could take 3-4 minutes per side.
  4. Remove the slices from the grill and place on the baking sheet.  Allow to cool.
  5. Once cooled, place 1/2 Tbsp of the cheese spread at one end of each zucchini slice.  Roll the slice up beginning with the end where the cheese spread is and secure with a toothpick.  Serve immediately or refrigerate until ready to serve.  These can be made up to a day in advance. Makes around 15 rolls.

Modern Art by Yangyang Pan

Yangyang Pan aka Sliso is a talented modern artist currently residing in Ontario, Canada and working in a variety of mediums. She graduated from Sichuan Fine Art Institute in China with a BFA in Painting in 1998 and MFA in Design in 2002.
“..Painting for me is a process of discovery. My works inspired by plants, textures and the natural world combines exuberant color. I work mostly with a palette knife giving much texture to the finished product. I created mixed-media abstract paintings in which I explore my interest in the wonder and the curiosity I feel about the world I live in. My fascination with old crumbling buildings and walls also inspires much of my work. ..”

MYdrap Cotton Place Mats

Tear away placemats and napkins sound pretty perfect for an outdoor lunch or dinner, and, as is the case with this collection by MYdrap, they’re re-usable and fully washable 100% cotton fabric. Come to think of it, these would be handy for lots of occasions, not just for outdoor meals.
