GREENHOUSE By Joost


Looking after what’s on the inside doesn’t have to mean sacrificing taste, or novelty. Funky pop-up cafe and bar Greenhouse is serving up organic eats with million-dollar views at Campbells Cove in The Rocks.
Greenhouse, by artist Joost Bakker, is an ingenious eco-friendly cafe built using recycled materials. But that’s only the beginning, at Greenhouse water is collected on site, waste is recycled, ingredients are grown on the roof and even the generator runs on cooking oil.
Menu staples, including breads, pastries, pizza, yoghurt and butter, will be made on site and the rest focuses on what’s available locally.
“I have designed the restaurant in reverse. I’ve started at the end and worked back. My dream has always been to build a restaurant that creates no waste and now I believe I can achieve it!” – Joost Bakker
